Brilliant Hacks for Organizing Your Refrigerator

I am so excited to put our new Samsung fridge to use with these brilliant hacks for organizing your refrigerator. It’s no secret that the fridge can become super messy and disorganized quickly, so I decided to confront the problem head-on.

First, I knew that I wanted to make a kid-friendly snack space in our refrigerator so that my son can pack his own lunch, get his own snacks, and more.

Strawberry Mango Fruit Rollups

DSC_0038aLooking for a quick and nutritious snack for school lunches? Try these delicious Fruit Rollups! DSC_0040a

I can not believe that school time is upon us. In three short weeks, my sweet boys will be off to school. While I will miss them dearly, I have to admit that I am ready for the structure that the school year brings. What I am dreading though, school lunches. The balance of feeding my kids nutritious meals with finding something they will actually eat, is so hard. Let’s not forget that no one likes to eat the same thing every day, so we have to be creative too!

DSC_0039aThis is where these Strawberry Mango Fruit Rollups come in. They are so simple to make and are extremely nutritious. The only ingredients are Strawberries, Mangos, and Juicy Juice 100% Mango Juice. I love using Juicy Juice to help make the fruit rollups sweeter. The sweetness of Juicy Juice comes straight form the fruit since there is no added sugar, high fructose corn syrup or artificial sweeteners. Each 8 ounces of Juicy Juice contains 1 cup of juice and 120% of Vitamin C. There are also 16 delicious flavors, so you could mix it up and make your own flavors of Fruit Rollups! DSC_0037a

Here is what you need:

2 cups of hulled strawberries

2 cups of mango (2 large mangos)

1/2 Cup of Juicy Juice mango juice

How to make it:

  1. Place rack in center of oven and preheat oven to 175 degrees F. (If your oven only goes to 200, open the door periodically during baking to cool it down.) Line a large rimmed baking sheet with a silpat mat or parchment paper. I used a silpat mat
  2. Purée strawberries, mango, and Juicy Juice in a food processor or blender until smooth. Add more juice as needed. Purée should be pourable.
  3. With a spatula, spread purée on lined baking sheet to 1/8-inch thickness. It may not extend all the way to edges. Spread as flat and as evenly as possible. Bake purée for 3 to 4 hours, until fruit no longer feels sticky but is still lightly tacky. Begin checking leather after 2 hours and continue to check every 30 minutes.
  4. Remove leather from oven and let cool completely on baking sheet. Lay a sheet of wax paper on top, then peel wax paper and leather off together. Transfer sheet to a cutting board, then slice it into desired sized strips or sheets. Roll and store or enjoy immediately.

I can’t wait to try different flavors. What flavor are you going to try?

Frosted Cherry Limeade

cherry1Looking for a refreshing, fun summer drink? These frosted cherry limeades are sure to be just what you are looking for.

cherrynew2Whether you are looking for a fun treat for the family, a way to cool off, or the final touch to a party menu, this frosted cherry limeade recipe is sure to do the trick. The best part about it: It contains NO SODA! I love that my kids view this as an ultimate treat, but I am sneaking in some of the vital nutrition that they need. One cup of fruit and 120% Vitamin C is found in every 8 ounces of Juicy Juice 100% Juice. cherrynew1

The base for this recipe is Juicy Juice 100% Juice in the cherry flavor. It gives the right amount of sweetness and texture to balance out all of the other ingredients. The cherry flavor only comes in two sizes of bottles (48oz and 64oz) but my kids love drinking the leftovers! The sweet blend in the cherry flavor shows off the full goodness of cherries with kid-friendly flavor. You could also try this recipe with one of the 16 other kid friendly flavors that Juicy Juice offers. I am going to try the fruit punch flavor next!

Here is what you need:

24 ounces Juicy Juice 100% Juice in the cherry flavor (or whatever flavor you choose)

1 Tbsp frozen limeade concentrate

1- 1 1/2 scoops of frozen sherbet or sorbet (I used raspberry sorbet)

2-3 Cups of ice (depending on how frosted you want it)

a dash of maraschino cherry juice

Yields 4 servings!

How to make it:
I started off mixing my 24 oz of cherry juice and limeade concentrate in my food processor. You can use a blender if that is what you have! Then I mixed in my frozen sorbet, maraschino cherry juice, and ice. Blend until it is all smooth. I also mixed some sugar and red food coloring in a bowl and rimmed my glasses with it. Top off with a slice of fresh lime and cherries! Enjoy!!

Things To Know Before Your Child's First Swim Lesson

It’s summer, and you know what that means — lots of pool time! A few weeks ago, we decided to enroll our son, Andrew, in swim lessons to prepare for the coming months. It would be his first time taking formal lessons, and I was a little anxious about what to expect.

I put together this list of Things To Know Before Your Child’s First Swim Lesson based on our experience with SafeSplash Swim School. They invited us to try their lessons once per week for a month.
